day 189 – lasagna

lasagna

today – with the exception of being late for work – was a good day.  not a pain-free day, but very low and i felt somewhat normal too.  i even got in a workout during my lunch hour.  after work, i went to the grocery story to pick up a few items,  came home and cooked dinner.  it felt great to be in the kitchen cooking again.  i put the above dish together, along with fresh spinach and garlic bread. it was delicious!

    And hey, girl, this photo of the lasagna is BEYOND yummy! One of my favorite dishes to eat!

    I bet! I love me LOTS of garlic.

    Back in November, my brother Tom made eggplant lasagna. I had never tasted it before, but it was delish!

    I ate it with a side salad and nice glass of red wine!

    yeah, ron it’s a very weird feeling and i welcome it. i hope it continues, i miss me.

    oh it was yummy and just the right amount of spicyness (not a word) to give it a kick.

    you know, i’m afraid of eggplant. well i don’t like it because of the way it looks but people say it’s delicious. i don’t like trying new foods, but i should. scared.

    • I know EXACTLY what you mean about the “look” of eggplant, Val. I feel the same way – it kinda looks slimy.

      But my brother first fried it lightly on each side after battering it with egg, Italian spices and bread crumbs, so that it was actually crispy. 🙂

        blah. it sure does. it’s a pretty color on the outside, but that’s it. it almost looks good when fried, but i just can’t eat it because i know what it is. oh well.
